My FODMAP Journey


I came across this documents about two months ago. Its has taken me this length of time to fully embrace this diet. For the last 10 days I have strictly followed the FODMAP diet and have not had indigestion or bloating at all.

I tried some lactose free milk and I can eat rice chex for breakfast. No problems.

Below is a lunch of leftovers I had that follows this diet and I had no reactions.



I have been amazed at the results.

Pizza Fusion

We went down to the Sand Lake road area today to give Pizza Fusion another try. They have gluten free pizza dough.

While the pizza was good for gluten free the crust is thin but sort of tough. Definitely not crispy. The over all experience was good.

I maybe more sensitive to the eggs in the dough than I am to wheat. I'll have to check their web site to see if I can determine the egg content.





The Pizza fusion web site has no mention of eggs in the gluten free crust:

* Our Gluten-Free crust contains the following ingredients: Bean Flour, Rice Flour, Tapioca Flour and Starch, Xantham Gum, Salt, Yeast, Cider Vinegar, Sugar, Canola Oil, Calcium Propionate.

New Years Day Tradition

Our New Years Day Tradition of going to eat at The Woodlands was continued today.


There was quiet a crowd there. I was not sure we would make it in the parking lot. Then when we got to the door the small entryway was full. We had about a 20 minute wait for a table then a 15 minute wait in the buffet line. It was good as usual.

Tour of the Great Ziggurat of Ur

B-roll of Air Force Chaplin Maj. Kevin Locket of 407th Air Expeditionary Group, leads the last U.S. tour of the Great Ziggurat of Ur and though the historical rebuilt site of Abraham’s home. Third generation caretaker, Deif, fills in the details from this archeological dig to military and civilian personnel from neighboring Camp Adder, Iraq.

A sad day at Paco's



It was a somber meal at Paco’s today. The notice on the door read the Marj had lost her battle with cancer on 4/11/2009. I have many fond memories of Marj and Paco’s. In fact, I choose to go to Paco’s today to celebrate my 20 years at Florida Hospital. I thought that I should go some place for lunch that held many memories for Florida Hospital and the many friends that I’ve gone to lunch with over the years.

I can remember the lunches with Fred Galuiha my first director at Florida Hospital. Then there were the meals with Dave Roberts and Bill Zipprer where we argued the merits or doing something this way or that way. There have been periods where I have not gone to Paco’s as often as I’d like, mainly because of the parking here at the hospital. But I always return for the friendly atmosphere and good food. At Paco’s you are always made to feel at home.

I can remember one meal I had at Paco’s where my order had been somehow misplaced Marj came over and said “I’m so sorry but we can’t find your order” I gladly gave it to to her. While I was eating my meal Marj came back over and told me this was on the house, “you can just leave when you are finished”.

While I was just a customer Marj made me feel at home, on most days she came over and said hi and chatted for awhile. She will truly be missed.
